A mortising bit is designed specifically for cutting square or rectangular holes for mortises, not for flattening large surfaces. Using it to flatten a slab would be inefficient and could damage the bit or the workpiece. For flattening a slab, a router with a straight bit or a specialized slab-flattening bit is recommended. In my shop the rule is you break a tools or bit using tit the wrong way , you buy another .
