It depends on your project and the finish you want. Sanding to 180 grit is usually enough for most woodworking projects, but if you want a smoother surface, especially for staining or applying a clear finish, sanding to 220 grit is recommended. For paint, 180 grit is typically sufficient. Also you must take into consideration the face of the wood , is there any voids that will stand out if so use wood putty or a epoxy filler.
